Ground chicken, white onion, green onion, and a few spices — shaped onto wooden skewers and air fried until golden. No egg binder, no breadcrumbs, no oil. The onion keeps the meat moist and the skewers hold the shape. This is the kind of kebab you'd make on a grill, except it's done in 18 minutes with zero cleanup.
The trick is wet hands when shaping — ground chicken is sticky enough to hold on the skewer without a binder if you work it with damp fingers. Ingredients
- 1.1 lb (500g) ground chicken
- ½ medium white onion, finely diced (~60g)
- 2-3 green onion stalks, sliced (~30g)
- 1 tsp garlic powder
- Salt, to taste
- Black pepper, to taste
- 4 wooden skewers

Step 1: Mix the meat
Combine ground chicken, diced white onion, sliced green onion, garlic powder, salt, and pepper in a bowl. Mix until evenly combined.

Step 2: Shape onto skewers
Wet your hands and shape the mixture around wooden skewers, forming oval kebabs. About 125g of meat per skewer.

Step 3: Air fry
Place skewers in the air fryer basket. Cook at 375°F (190°C) for 15-18 minutes until golden brown and cooked through (internal temp 165°F / 74°C). No flipping needed.
