Ingredients

  • 7 oz (200g) low-fat cottage cheese (2%)
  • 1 scoop (35g) chocolate whey protein powder
  • 2 tbsp unsweetened cocoa powder
  • 1 large egg
  • 2 tbsp erythritol (or sweetener of choice)
  • ½ tsp baking powder

Instructions

  1. Step 1: Blend the batter

    Add cottage cheese, protein powder, cocoa, egg, erythritol, and baking powder to a blender. Blend until completely smooth with no lumps.

  2. Step 2: Fill the molds

    Fill the molds

    Divide batter evenly among 4 silicone muffin molds. Place molds in the air fryer basket.

  3. Step 3: Air fry

    Cook at 320°F (160°C) for 15–18 minutes until the tops are set and a toothpick comes out mostly clean. They'll firm up more as they cool.

  4. Step 4: Cool and serve

    Let cool in the molds for 5 minutes before removing. Best eaten slightly warm.
