Homemade granola that's actually high in protein and ready in under 20 minutes — no oven needed. The air fryer's compact size works perfectly for a single-serving batch, giving you crunchy chocolate clusters without the wait.

The trick is low temperature — 248°F (120°C). With this small a batch, chocolate and honey burn fast at higher temps. Egg white acts as the binder that holds clusters together, and chia seeds add fiber without changing the flavor. If you're new to air fryer cooking, an affordable air fryer under $50 handles this perfectly.

At 26g of protein and 8g of fiber per serving, this hits harder than store-bought granola that's mostly sugar and oil. Eat it straight as a snack, with Greek yogurt, or over milk. If you're tracking your intake, pair it with our daily calorie calculator to see how it fits your goals. Ingredients

  • 2 oz (55g) quick oats — about 5 heaping tablespoons
  • 0.7 oz (20g) chocolate whey protein isolate — about 2/3 scoop
  • 1 tsp (5g) chia seeds
  • 1 tbsp (14g) honey
  • 1 tsp (6g) sunflower oil
  • 1/2 tsp (3g) unsweetened cocoa powder
  • 2 tsp (10g) egg white — about 1/3 of one egg white
  • 1 tsp (5ml) water
  • Pinch of salt

Instructions

  1. Step 1: Mix dry ingredients

Combine oats, protein powder, cocoa, chia seeds, and a pinch of salt in a bowl.

  2. Step 2: Add wet ingredients

Pour in honey, sunflower oil, egg white, and water. Rub the mixture together with your hands until you get a sticky, crumbly texture.

  3. Step 3: Prep the air fryer

Cut a parchment paper circle to fit the basket bottom. Leave about 1/2 inch (1 cm) gap around the edges so air can still circulate.

  4. Step 4: Air fry at 248°F (120°C)

Spread the granola in an even layer on the parchment. Bake for 5 minutes without touching.

  5. Step 5: Stir and continue

At 5 minutes, take the basket out and stir with a spatula to break up clumps. Return and bake for another 5-7 minutes until the granola looks crumbly and has darkened slightly.

  6. Step 6: Cool completely

Pour onto a cold plate. It will feel soft — that's normal. The crunch develops in 15-20 minutes as it cools and the sugars set.
