Ingredients
- 1.1 lb (500g) ground chicken
- 8 oz (225g) white mushrooms, sliced
- 2-3 large eggs, hard-boiled and chopped
- 3.5 oz (100g) hard cheese, shredded
- 5 tsp tomato paste
- 2 tbsp (40g) plain Greek yogurt
- 1/2 tbsp cooking oil (for mushrooms)
- Salt and pepper to taste

Step 1: Prep the fillings
Hard-boil the eggs (10 min), peel, and chop. Sauté sliced mushrooms in a little oil over medium-high heat until golden, about 5-7 minutes. Set both aside.

Step 2: Shape the nests
Divide the ground chicken into 5 equal portions. Season with salt and pepper. Shape each into a flat disc, then press the center to form a cup/nest shape. Place on a foil-lined baking sheet.

Step 3: Add the sauce
Spread tomato paste inside some nests and yogurt inside others — mix it up however you like.

Step 4: Fill the nests
Top each nest with sautéed mushrooms and chopped boiled egg.

Sprinkle shredded cheese on top of each nest. Bake at 390°F (200°C) for 20-25 minutes until the chicken is cooked through (165°F / 74°C) and the cheese is golden and bubbly.
