Ingredients

  • 1.1 lb (500g) ground chicken
  • 8 oz (225g) white mushrooms, sliced
  • 2-3 large eggs, hard-boiled and chopped
  • 3.5 oz (100g) hard cheese, shredded
  • 5 tsp tomato paste
  • 2 tbsp (40g) plain Greek yogurt
  • 1/2 tbsp cooking oil (for mushrooms)
  • Salt and pepper to taste

Instructions

  1. Step 1: Prep the fillings

    Hard-boil the eggs (10 min), peel, and chop. Sauté sliced mushrooms in a little oil over medium-high heat until golden, about 5-7 minutes. Set both aside.

  2. Step 2: Shape the nests

    Shape the nests

    Divide the ground chicken into 5 equal portions. Season with salt and pepper. Shape each into a flat disc, then press the center to form a cup/nest shape. Place on a foil-lined baking sheet.
