Potato pancakes are normally shallow-fried, and that pan of oil is where most of the calories come from - a few tablespoons can add 250-400 calories to the same potatoes. A waffle maker cooks both sides at once under pressure, so the crust forms from the potato's own starch instead of hot fat. No oil, no spray, no browning problem.

Two things decide whether this works. Squeeze the grated potato dry before you mix anything in - wet shreds steam, and without oil there is nothing to compensate. Then leave the lid shut for the full 10-12 minutes. The waffle sticks until the crust sets, and it lets go by itself once it does, so every early peek just tears it open.

The whole batch comes to 336 calories with 14 grams of protein, most of it from the single egg. That is close to air fryer potato wedges for the same weight of potato, and less than half of what a fried version costs. It is still a carb dish, so it pairs best with something lean - grilled chicken, cottage cheese, or a couple of eggs on the side. If you are not sure where a 336-calorie meal sits in your day, run the numbers through the daily calorie intake calculator. Ingredients

  • 8.8 oz (250 g) potatoes, peeled and grated
  • 1 large egg
  • 2 1/2 tbsp (20 g) all-purpose flour
  • 1/4 tsp salt
  • Black pepper, to taste

Instructions

  1. Step 1: Grate the potatoes

    Grate the potatoes

Box grater, large holes. Coarse shreds keep their shape in the waffle maker - a fine grate turns to mush.

  2. Step 2: Squeeze out the water

Press the shreds hard in your hands or a clean towel until no more liquid comes out. This is the whole recipe. Wet potato steams instead of crisping, and without oil there is nothing to rescue it.

  3. Step 3: Add the flour

    Add the flour

20 g is enough to bind the shreds. More and it turns into a potato pancake instead of hash browns.

  4. Step 4: Crack in the egg

    Crack in the egg

Whole egg, yolk and white. It sets around the shreds and holds the waffle together once the starch crust forms.

  5. Step 5: Salt and pepper

    Salt and pepper
  6. Step 6: Mix to a sticky batter

    Mix to a sticky batter

Stir until every shred is coated and the mix holds together on the spoon rather than falling loose.

  7. Step 7: Cook 10-12 minutes in a hot, dry waffle maker

Preheat it first, then spread the batter, close the lid and leave it shut. No oil and no spray. It sticks while the crust is forming and releases on its own when it is done - deep golden, crisp at the edges.
