This air fryer chicken jerky is the ultimate high-protein, low-fat snack. Thin-sliced chicken breast slow-dried at low temperature gives you crispy, chewy strips packed with 54g of protein for just 272 calories. The secret is slicing the chicken while it's half-frozen — take the breast out of the freezer about 60 minutes before slicing. Semi-firm chicken is much easier to cut paper-thin, which is what gives you that jerky texture. No dehydrator needed. A quick 5-10 minute soy-garlic marinade adds all the flavor you need. No oil, no sugar — just two ingredients and an air fryer doing all the work.
Ingredients
- 1 chicken breast, boneless skinless (8 oz / 227g)
- 2½ tablespoons (37 ml) soy sauce
- 1 teaspoon garlic powder

Step 1: Semi-freeze the chicken
Place the breast in the freezer for about 60 minutes, or take a frozen breast out 60 minutes early. You want it firm but not rock-hard — just enough to slice cleanly.

Step 2: Slice paper-thin
Using a sharp knife, cut the half-frozen breast into the thinnest strips you can manage. Thinner = crispier.

Step 3: Marinate
Toss the slices with soy sauce and garlic powder in a bowl. Let sit 5-10 minutes.

Step 4: Load the air fryer
Lay strips in a single layer in the basket. Work in batches if needed — don't overlap.

Step 5: Air fry low and slow
Cook at 170°F (75°C) for 1 hour, flipping halfway through. Strips should be dark, dry, and chewy-crispy when done.
